Let me take you through my vision for the Shoap:
You’ll walk in and smell the morning rolls and scotch pies coming out of the oven. There will be a service counter to your right with tables and counter seating all built from the same wood.
On that service counter will be where we make our coffee roasted on Skye, display our sandwiches, shortbread, tablet and clootie dumpling and pour our beer from breweries across Scotland and of course take your order and chat about the joys of a crispy tattie scone.
To your left will be a fridge full of Scottish soft drinks, craft beers, cider and more from producers you may or may not have discovered yet from Rapscallion in Glasgow to Newbarns in Edinburgh.
There will be another fridge with a range of Scottish cheeses curated by IJ Mellis in Edinburgh and meats including haggis, square sausage, Ayrshire bacon, stornoway black pudding as well as charcuterie and smoked fish.
There will also be shelves full of chocolate, biscuits, oatcakes, preserves, salts, seaweeds and sauces.
Make it your local for a coffee, beer and a “piece” or come down on the weekend to hang out and sample the cans in our fridge and then take some square home for breakfast to cure the head in the morning.
